Sodium Benzoate

Sodium Benzoate is a preservative and the most helpful chemical for preventing food from moulds. It is the sodium salt of benzoic acid. With enhancing the product shelf life to two years, the sodium benzoate concentration required is about 0.5%.

Chemical Composition and Properties

Sodium benzoate goes by the chemical formula of C7H5NaO2, and the molecular weight is 144.11 grams / mol. The appearance is like a white powder-like chemical with no odor but a sweet, astringent taste. It is soluble in water and has many antimicrobial characteristics, making it a better preservative. It prevents food spoilage for up to two years from the day of manufacturing. It plays a significant role in the growth inhibition of potentially harmful bacteria, mould, and other microbes in food.
